An excellent choice for the summer table would be a salad with fresh cabbage, because this vegetable is a rich source of vitamins – C, A, B1, B2 and several others. We offer the most delicious recipes based on early cabbage – with carrots, cucumbers, as well as options with radishes and corn.

Fresh cabbage salad with cucumber

For cooking you need the following products:

  • Cucumber – 2 pcs.
  • Young cabbage – 300 g.
  • Salt, ground pepper.
  • Sunflower oil – 2-3 tbsp. l.
  • Green onions (optional) – 2 tbsp. l.

The cabbage needs to be grated on a shredder or cut into long strips 1-3 mm wide. Peel the cucumber and taste for bitterness from the stem side. If necessary, trim until no longer bitter. Divide into two halves lengthwise, cut into half rings 2-3 mm wide and mix with cabbage.

Combine oil, pepper, salt in a bowl, season the salad and mix. You can sprinkle chopped green onions on top.
