The best mayonnaise: how to make a delicious homemade sauce

Mayonnaise is the most popular sauce in home cooking. It is impossible to imagine holiday salads, bread spreads and many baked dishes without it. Most people use store-bought mayonnaise with questionable ingredients, but you can make this sauce at home.

The basis of real mayonnaise is unchanged – fresh eggs and high-quality vegetable oil. At the same time, it can be made with yolks alone or from whole eggs. The remaining ingredients – salt, sugar, lemon juice, mustard – are added for taste.

What is important to know before preparing mayonnaise

Homemade eggs will make yellow mayonnaise. If you have to make it from store-bought eggs, the sauce will turn out very light.

You can add a variety of spices, finely chopped pickled cucumbers, olives, and olives to the sauce. And the amount of salt can be changed to taste.

In order for mayonnaise to mix well and quickly, all products must be at the same room temperature.

Homemade mayonnaise

  • Vegetable oil – 1 tbsp. (200 ml)
  • Chicken egg – 1 pc.
  • Lemon juice – 1 tbsp. l.
  • Mustard – 1 tsp.
  • Sol – 0.5 h. l.
  • Sugar – 1 h. l.

Take a mixing bowl and pour vegetable oil into it. Add mustard, salt and sugar. Pour in lemon juice.

Beat the egg into the bowl (it is important that the yolk is intact).

Lower the immersion blender into the bowl until it completely covers the yolk. Start shooting down at high speed.

When the mass becomes thick and does not flow, the mayonnaise is ready. Then you should stop whipping, otherwise it can be over-beaten and it will be liquid.

Mayonnaise with garlic, cucumber and ginger

  • Chicken egg – 1 pc.
  • Mustard – 0.5 tsp.
  • Sugar – 0.5 h. l.
  • Sol – 0.5 h. l.
  • Lemon juice – 1 tbsp. l.
  • Vegetable oil – 150-200 ml 
  • Garlic – 1 clove
  • Ginger root – a small piece 1-1.5 cm
  • Pickled cucumber – 1-1.5 cm piece
  • Greens (optional) – a handful

Mix egg, mustard, sugar, salt, garlic, ginger root and cucumber in a blender until smooth.

Switching the blender (or mixer) to higher speeds, slowly pour in the vegetable oil in a thin stream.

As soon as the mixture begins to thicken, you can increase the flow of oil. It should be noted: the more vegetable oil, the thicker the mayonnaise.

After bringing the mixture to the desired thickness, add lemon juice and beat a little more. If desired, add fresh or frozen herbs to the prepared mayonnaise and mix with a spoon.
